The NC Sweet Lews BBQ meal has high slaw stacked high

CHARLOTTE, NC Red coleslaw, known as red slaw, is a staple in Lexington-style barbecue.

At Sweet Lews BBQ in Charlotte, this is the only option on the menu.

Owner Lewis Donald said its sourness and kindness go well with the minced pork. In his restaurant, pork sandwiches are usually covered with red slaw.

Donald started making red slaw by placing chopped cabbage in a bowl and adding sugar and salt to it.

After waiting a few minutes, he added vinegar and a ketchup -based sauce.

I feel like it will give you a better bite every time you bite the sandwich, Donald said.

Theres more involved in the perfect bite. For Donald, it starts with meat, which is just smoked with wood.

All smoke, no wrap, Donald said.

He is proud of his smoked meats and the red slaw he serves.

The pork was nice and tender and juicy then [the red slaw] enters and it has a bit of acidity, sweetness and little bits of crisp, Donald says.

Donald opened his restaurant in 2018 to bring North Carolina tradition to Charlotte.

I wanted to get that and give that to Charlotte, we had chopped pork barbecue, red slaw and buns all day, ”Donald said.

Sweet Lews BBQ also offers boiled peanuts, which is another North Carolina favorite.

The restaurant is open from Tuesday to Sunday.
